This July, the Therapy Box is another celebration of real cheesemakers and delicious cheese.
We’re so pleased to welcome Harvey Cheese, based in Wokalup on Noongar Country in Western Australia. They’ve been crafting cheese for over 20 years the traditional way — by hand, in small batches, using fresh local milk. Today, Kael Lottering and head cheesemaker Jason lead the charge, producing a range of soft and hard cheeses, plus beautifully cultured butter.
Their signature cheese is the OMG Triple Cream — winner of the 2024 DIAA Gold Medal. Let this beauty ripen for at least 4 weeks but from 6 weeks it reaches that luscious, gooey perfection Triple Creams are known for. Give it the gentle squeeze test — if it yields slightly, it’s ready. For a deeper, more complex flavour, enjoy it close to (or even past) its best before date.
This month we’ve taken a delicious detour and added a goat milk cheese — Nimbin Valley Dairy’s Blue Goat. All the character of a bold blue, but with the bright, tangy punch of fresh goat milk. Even if goat cheese isn’t usually your thing, we urge you to try this one. It’s truly sublime.
Long Paddock Cheese returns with their standout semi-hard, Banksia. Back by popular demand, this award-winner proves that Australian semi-hards can have flavour. Your tastebuds — and your cheeseboard — will thank you.
Rounding out the box is also a returning favourite: Nimbin Valley Dairy’s Nashua Washed Rind — the same cheese that stopped renowned French affineur Hervé Mons in his tracks back in 2012. He called it the best cheese in the country. We still agree.

We’re sticking with this daring Australian salami-maker for good reason. This one blends 70% wild-hunted Granite Belt venison with 30% rich pork fat. Layered with the scent of gin botanicals, it brings a rugged bush elegance to your cheeseboard. Added to your cheeseboard it’s not just a pairing, it’s an elevation.
Mountainside Finger Limes: Finger Lime Paste (100g)
From the hinterland of northern NSW, this native citrus paste is a showstopper. Last month was classic quince; this month, it’s bold, bright, and unmistakably regional. Zingy, zesty, and made to pair with cheese.
Silver Tongue Foods: Organic Sourdough Crackers (125g)
Light, crisp, and just the right amount of crunch. These crackers are small-batch, organic, and made to let the cheese shine — or to snack on all by themselves.
Mount Zero: Marinated Mixed Olives (2 x 80g)
We’ve doubled up on these favourites: one pouch of Lemon & Thyme, and one of Rosemary & Native Pepper. These little flavour bombs are the finishing touch to any grazing spread.
